The Food Lab

Welcome to our Food Lab, the beating heart of our company, where the magic of transformation comes to life. Here, we bring a variety of products to life using the treasures we harvest from our farm in Corsica.

We believe in a complete and transparent production process, where every step is carefully controlled—from cultivation to processing—until our products reach your table.

In our Food Lab, we have three distinct rooms, each dedicated to specific aspects of our production:

The Flour Room: Here, our carefully harvested chestnuts from our Pianello chestnut grove are transformed into chestnut flour. This flour forms the base of many of our creations, including cakes, crepes, and flans.

The Salts and Vinegars Room: In this room, we craft vinegars, flavored salts, and infused oils. The ingredients come directly from our farm, including rosemary, figs, lemons, oranges, nepita, and myrtle. This botanical diversity results in unique products that capture the essence of Corsica.

The Infusions and Teas Room: Here, we bring our teas and herbal infusions to life using carefully picked herbs, including myrtle leaves harvested from the Corsican maquis.
